My favorite family recipe (next to the family spaghetti sauce) is this cake. Anything with cream cheese frosting is typically a win in my book, but when paired with this super easy to make warm spiced apple cake – uh – it just makes me love fall so much more. Plus it gives you something to make with all those apples you just picked!
What you need for the cake:
- 4 cups chopped apples
- 2 cups sugar
- 2 eggs
- 1/2 cup of vegetable or canola oil
- 2 teaspoons of vanilla
- 1 cup chopped walnuts
- 2 cups of flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
What you need for the frosting:
- 1/4 cup of butter
- 1 cup powdered sugar
- 3 ounces cream cheese
- 1 teaspoon vanilla
Preheat your oven to 350 degrees.
In a mixing bowl or with your kitchen aid mixer combine the apples, sugar, eggs, oil, vanilla and walnuts – mix together and then add the flour, baking soda and cinnamon.
Place in a greased cake sheet pan and bake for 1 hour or until a toothpick comes out clean.
Once the cake is out and cooled, whip the frosting together with either a hand mixer or in your kitchen aid. Frost and enjoy!
